EFFECT OF GENOTYPE AND MUSCLE TYPE ON FATTY ACIDS PROFILE AND CHOLESTEROL CONTENT IN MEAT OF YOUNG SLAUGHTER CATTLE

摘要
The research material consisted of samples collected from musculus longissimus lumborum and musculus semitendinosus muscles taken from 46 carcasses of ca. 18 month old young bulls. The animals represented two following genotypes: Polish Holstein-Friesian breed of Black and White variety (21 animals) as well as crossbreeds from Black and White cows and Limousine sires (25 animals). A significant (p < 0.01) effect of the genotype was found on the percentage of PUFA, the PUFA:SFA ratio, and the CLA content. A significantly higher percentage of SFA was determined in the musculus semitendinosus of the two analyzed genotypes. It was proved that the genotype had no significant impact on the total content of cholesterol, which, however, was significantly impacted by the muscle type. A higher content of cholesterol was found in the longissimus lumborum muscle compared to the semitendinosus muscle. Significant interaction between genotype and muscle type were found only in the case of C-18:2 and C-18:4 acids, the PUFA content, and PUFA to SFA ratio.
