EVALUATION OF INTERNAL QUALITY OF FRESH-CUT POMELO USING VIS/NIR TRANSMITTANCE

Nondestructive techniques based on visible and near-infrared (Vis/NIR) spectroscopy were used for evaluation of the internal quality of fruit products. The objectives of the study were to investigate the feasibility of using Vis/NIR spectroscopic devices in transmission mode to predict the soluble solids content (SSC) and total acidity (TA) of fresh-cut Kao Numpung pomelo. The determination of SSC and TA could be successfully performed through Vis/NIR spectroscopy using partial least squares regression. Preprocessing methods and interval partial least squares (iPLS) algorithms were analyzed. The results indicated that Vis/NIR spectrophotometry in combination with preprocessing techniques can be applied to predict the soluble solids and TA of fresh-cut Kao Numpung pomelo. The optimal SSC model was established by standard normal variate transformation. The TA prediction model could be simplified by iPLS regression.
