摘要
High-voltage pulsed electric fields technology is one of the focuses to researchers in non-thermal process. The effects of high-voltage pulsed electric fields treatment on physico-chemical property in milk were investigated. The result indicates that the pH, electric conductivity, the contents of the lactose and the protein are not significant differences with the different electric fields conditions.
