Transpiration Loss of Fresh Produce in Transport Packages - a Base for a Shelf Life Prediction Model

摘要
The kind of packaging affects the boundary layer resistance (s/cm) respecting the water loss of fruit and vegetables in the process chain. This study aims to determine the effects of airflow on the climatic conditions respecting the boundary layer resistance (s/cm) of single products inside transport packaging. Therefore, 30 evaporation spheres were put in three layers in a plastic box with a size of 40x30x17 cm filled with plastic spheres at natural convection and forced airflow (0.8 m/s). The results showed differences in the transpiration of produce depending on the position inside the box and the airflow.
