Unlike other chromatographic methods such as gas chromatography and high performance liquid chromatography which were routinely used in almost all food labs, capillary electrophoresis is relatively a novice in food science, the detection limits and low process sample volume is the Achilles' heel of this technique. Nevertheless, with ease of its high resolving power, rapid method development, easy sample preparation and low operation expense, capillary electrophoresis has demonstrated its great potential in the domain of food analysis, we could safely count thereafter, accompanied by both theoretical and instrumental development, capillary electrophoresis will be much more popular in food analysis in the coming next century.Unlike other chromatographic methods such as gas chromatography and high performance liquid chromatography which were routinely used in almost all food labs, capillary electrophoresis is relatively a novice in food science, the detection limits and low process sample volume is the Achilles' heel of this technique.
