Role of calcium ions and temperature on dextransucrase production

摘要
Dextransucrase [E.C. 2.4.1.5] enzyme from a newly isolated strain of Leuconostoc mesenteroides PCSIR-4 showed maximum production in a fermentation medium containing 0.005% CaCl2. The production of dextransucrase was 2.5 times higher in the medium containing calcium ions as compared to the medium without calcium ions. Also, the stability of the enzyme increased up to 120 d. Maximum dextransucrase production in fermentation medium was obtained when culture was incubated at 25 degrees C, while the maximum extracellular enzyme activity was observed at 35 degrees C. Thermal stability of extracellular enzyme was maximum at 30 degrees C, while at 50 degrees C the total enzyme loss was observed in 240 min.
