摘要
Industrial enzyme preparations have been known and used worldwide since '70s and they have been applied, among other food industry branches, in alcohol, beer and soft drink industries. Recently there have been formulated studies on using enzyme preparations for other food industry branches as, for example, oil and margarine industries where they have not been used up to now. The present work is a survey on enzyme preparations use for different food industry branches with special concern absent enzyme preparations used for oil industry.
