Both the T durum L. and T aestivum L. species of wheat are distinguished for a high content of protein, high and average content of wet gluten and average value of K-SDS. Nevertheless, there are notable differences in their bio-morphological indices including the life cycle duration, an important index for crop regionalisation. This study presents the results of an evaluation of morpho-physiological and physicochemical indices in some T durum and T aestivum lines and cultivars, cultivated on natural field environment. Between the above-mentioned qualitative indices and the production indices are estimated negative correlations meanwhile, among qualitative and life cycle indices, some weak correlations are being evaluated. On the contrary, there are very strong positive correlation between the content of protein and gluten, between the content of protein and K-SDS, and between gluten and K-SDS. Similarly, among the content of protein, gluten, K-SDS and protein dissoluble fractions in lactic acid 3.85% and KOH 0.5% positive, strong correlations are being estimated. According to the evaluation of the above-mentioned indices, there are 5 lines (T durum) and I cultivar (T aestivum), which result in satisfactory bio-morphological and physical indices and better indicators of quality.
