摘要
This review presents an in-depth exploration of glucosinolates, a vital group of phytochemicals predominantly found in Brassica crops, with cruciferous vegetables serving as their primary source. Recognized as GLSs, these compounds possess remarkable concentrations and are renowned for their potential anti-cancer properties, rendering them highly valuable for human health. The objective of this study is to conduct a comprehensive analysis of the existing scientific knowledge surrounding glucosinolates, with a specific focus on their extraction, separation, biosynthesis, and assessment of biological activity. Furthermore, the research investigates the potential of glucosinolates to foster the development of novel medications. As environmental awareness and regulations intensify, the ban on harmful and toxic synthetic corrosion inhibitors has stimulated a growing interest in the pursuit of safe and effective alternatives. These inhibitors, containing hetero atoms and/or pi electrons, exhibit ideal characteristics for mitigating metal corrosion, particularly when metals are exposed to oxygen. In summary, this article underscores the pivotal role of glucosinolates in promoting human health, emphasizes the significance of developing environmentally safe corrosion inhibitors, and aims to provide a comprehensive overview of scientific knowledge regarding glucosinolates and their potential for novel medication development.
