An improved analysis method for testing 3-chloropropane-1, 2-diol (3-MCPD) fatty acid esters in oils based on German Society for Fat Science (DGF) standard method has been presented in this study. According to the results, this method has good linear correlation with the limit of detection (LOD) as 0.0225 mg/kg, limit of quantification (LOQ) as 0.0760 mg/kg, linear range as 0.05~5.0 mg/kg; the recovery ranged was 95.36%~101.18% with a relative standard deviation of 1.36%~8.14%. Besides, the 3-MCPD fatty acid esters in seven kinds of commercial oils have been detected in order to clarify this method. The results showed that the features of analysis method are excellent in qualitative and quantitative accuracy, high sensitivity and good reproducibility; so it can meet the requirements of 3-MCPD fatty acid esters in oil.
