摘要
In mimic gastric juice, the inhibiting effects of ethanol extract, polyphenol extract and favonoids extract from Aegiceras corniculatum leaves on nitrosation reaction were investigated with scavenging ratio on nitrite and interdicting ratio on nitrosamine synthesis as the index. The results showed that ethanol extract, polyphenol extract and favonoids extracts from Aegiceras corniculatum could scavenge nitrite and interdict nitrosamine synthesis to different extents. The scavenging ratio on nitrite of ethanol extract from Aegiceras corniculatum leaves reached up to 90.31% under the condition of 6 mg/mL concentration and 3 h reaction time, the interdicting ratio on nitrosamine synthesis of ethanol extract was 57.44% under the condition of 14 mg/mL concentration and 3.5 h reaction time. The scavenging ratio on nitrite of polyphenol extract from Aegiceras corniculatum leaves reached 100% under the condition of 8 mg/mL concentration and 3h reaction time, and when the optimal condition was 7 mg/mL concentration and 3 h reaction time, the interdicting ratio on nitrosamine synthesis reached 82.20%. The scavenging ratio on nitrite of favonoids extract from Aegiceras corniculatum leaves reached 100% under the condition of 45 mg/mL concentration and 5 h reaction time, its interdicting ratio on nitrosamine synthesis was 75.40% under the optimal condition of 35 mg/mL concentration and 3.5 h reaction time. Overall performance showed that the scavenging ability on nitrite and interdicting ability on nitrosamine synthesis of polyphenol extract from Aegiceras corniculatum leaves was stronger than ethanol extract and favonoids extract. ©, 2015, Chinese Institute of Food Science and Technology.
