摘要
This paper aims to account for the changes experienced in the restaurant sector following the COVID-19 pandemic of 2020-2021. To achieve this objective, it first presents an overview of the challenges of working with statistical sources related to the sector, classifying them into issues of definition and quantification, and issues of coherence and opacity. Subsequently, it reviews several public statistical are reinforced or disappear, as well as those that emerge during the health crisis or after it.
