Quality and Postharvest Physiology of Torch Ginger Stored at Different Temperatures

摘要
The objective of this study was to evaluate the postharvest quality and durability of torch ginger (Etlingera elatior) stored at different temperatures and investigate the resulting physiological effects. Torch ginger stems were collected and stored at temperatures of 8, 12, 16, 20, and 24 degrees C. Visual quality, percentage of true flowers, absorption rate, water content, fresh and dry mass, and colorimetric parameters were evaluated every 3 days post stored. Additionally, the content of carotenoids and anthocyanins, quantification of hydrogen peroxide, lipid peroxidation, antioxidant system enzymes, and the content of total soluble sugars, reducing sugars, and proteins were analyzed. Stems stored at 8 degrees C maintained their reserves for extended periods but induced the production of reactive oxygen species. Stems stored at 12 degrees C absorbed more water than those stored at 8 degrees C and maintained quality for longer storing period. Higher temperatures accelerated the appearance of true flowers and increased the consumption of macromolecules, reducing the durability of the stems. Storage of torch ginger at temperatures between 12 and 16 degrees C allowed it to maintain commercial quality for longer period. Overall, this study provides insights into the postharvest physiology of torch ginger and highlights the importance of storage temperature in maintaining its quality and durability.
