This paper briefly summarizes the state of the art of solar drying. An estimate of post-harvest losses, especially in the developing countries; the technology of solar drying; and the economics of solar drying are discussed. The potential of solar drying to reduce post-harvest losses is assessed, conclusions are drawn, and recommendations are made.
