Glyceride structure of crude and interesterified rapeseed oil under conditions of 0.2 and 0.6% nickel catalyst at 90°C for 4 hours were investigated by using pancreatic lipase for obtaining 2-monoglyceride. The fatty acids of 2- monoglyceride were recorded with gas liquid chromatography and glyceride structure of the three samples were determined. 2- Mono-Stearin with olein at 1- and /or 3 positions, 2-mono- olein with stearin at 1- and /or 3 positions, 2- mono - linolein with linolenolein at 1- and/or 3 positions, 2- mono - linolenolein with linolein at 1- and/or 3 positions, 2- mono - stearin with erucein at 1- and/or 3 positions and 2- mono erucein with stearin at 1 and/or 3 positions. The weight percentages of triglycerides of crude and interesterified rapeseed oil were calculated and tabulated.
