Property of yellow pigment from Calendula officinalis L. flowers

摘要
The extraction, stability and anti-oxidation of yellow pigment from Calendula officinalis L. flowers were studied by means of solvent-extraction process and ultraviolet-visible spectrophotometry. The results showed that the pigment was mostly composed of carotenoids, and the extraction rate was high with petroleum ether and actone of equal volume. The extract was red lipidic liquid, with indexes reaching to the national standards. The pigment was stable to heat, acid, alkali, oxidizer, reductant, ultraviolet ray, complexer and most metallic ions except Fe3+, Al3+, Cu2+ and sunlight. The pigment had remarkable anti-oxidation on lipids.
