Systematic calculation of thermodynamic properties of an ice-water system at subfreezing temperatures

A mathematical model of water activity change at subfreezing temperatures was used for calculating the thermodynamic properties of an ice-water system. The predicted values of molal latent heat of fusion of ice and specific heat of supercooled water in the temperature range from 273.15 to 233.15 K vary from 334.20 to 230.04 kJ/kg and from 4.19 to 4.72 kJ/kg K, respectively. These values may be utilized in the calculations of thermodynamic properties of frozen food systems.
