Functional properties and rheological behavior of soluble dietary fiber from ponkan residue

With ponkan residue as raw material, the extraction methods of soluble dietary fiber (SDF) by water extraction, cellulose and high-pressure homogenization coupled cellulose were respectively studied in this paper. The result showed that the absorption capacities of W-SDF, C-SDF and HC-SDF for sodium cholate were 313.1 mg/g, 560.0 mg/g and 761.2 mg/g, respectively; The absorption capacities for cholesterol were 4.80 mg/g, 10.95 mg/g, 9.11 mg/g (pH 2) and 5.43 mg/g, 11.87 mg/g, 10.58 mg/g (pH7), respectively; The removal rate for NO2- were 23.03%, 18.48% and 31.12%, respectively; The inhibitory rate for pancreatic lipase activity were 11.96%, 31.69% and 35.80%, respectively. The apparent viscosities of W-SDF, C-SDF and HC-SDF were 0.104 pa·s, 0.188 pa·s and 0.245 pa·s, respectively. The solution of SDF from ponkan residue was pseudoplastic fluid which viscosity decreased with the increasing of shear rate. ©, 2015, Chinese Institute of Food Science and Technology.
