摘要
This work is to study the technical method of the microwave-assisted extracting tea polyphenols from tea using pure water as the extracting solvent. The extracted results were detected by the orthogonal experimental designed at the temperature of 50°C, 80°C and 105°C respectively, the holding time of microwave radiating on the experimental for 5 min, 20 min and 35 min, as well as the different ratio of the solvent volume to sample weight. The experimental result confirmed that the tea polyphenols can been extracted completely at 80°C and 35 min for the microwave radiation while water is used as the extracting solvent.
