Decontamination of aflatoxin B1 with electrolysed oxidising water and security evaluation

Mycotoxin are likely to cause some of the more serious food safety problems. Among the mycotoxin contamination, aflatoxin B1 (AFB1) is of concern due to its toxigenic potential to human and most species and wide contaminated range. In this study, production identified and safety evaluation of Aflatoxin B1 decontaminated by Electrolyzed Oxidizing Water in order to reveal the decontaminated mechanism of Electrolyzed Oxidizing Water. The molecular weight and chemical formula of production identified by FT-ICR-MS was 364 and C17H13O7Cl, respectively. The NMR result further indicates that the chemistry structure is 8-Cl-9-OH-AFB1. It is an amphiphilic molecule, in contrast to fat-soluble AFB1. The Safety Evaluation revealed that 8-Cl-9-OH-AFB1 did not exhibit mutagenic activity or cytotoxic effects. The IC50 value of 8-Cl-9-OH-AFB1 is 150 mmol/L. Taken together, the studies indicate that Electrolyzed Oxidizing Water has been tested for safety in decontaminating AFB1.
