Optimization of high-pressure homogenization extraction of soluble dietary fiber from ponkan residue using response surface methodology and its antioxidant activities

Response surface methodology (RSM) was employed to optimize the process parameters of high-pressure homogenization (HPH) extraction of soluble dietary fiber (SDF) from ponkan residue. The adequacy of the model equation for predicting the optimum response values was verified effectively by the validation. Effects of pressure, treatment time and material temperature on yield of SDF were investigated. Maximum yield of SDF from the mathematical model was predicted to be 43.86% dry basis under the condition of pressure 37 MPa, 8 times and material temperature 41℃. Under optimal conditions, H-SDF exhibited reducing power, and revealed strong scavenging activity against hydroxyl and superoxide anion radicals and DPPH radicals with an IC50of 7.89 mg/mL, 6.87 mg/mL and 6.17 mg/mL, respectively. Therefore, it was feasible to use HPH method to achieve the extraction of the SDF from ponkan pomace. ©, 2015, Chinese Institute of Food Science and Technology. All right reserved.
