Protein-polyelectrolyte coacervates: Gels or concentrated polymer solutions?

The complex coacervation of a model system comprising the protein BSA and poly(dimethyldiallylammonium chloride) (PDMDAAC) is discussed. The coacervate contains, typically 80% water, 14% protein and 6% polymer. Coacervation is affected by pH, ionic strength, protein-to-polymer ratio but is independent of temperature. The coacervate phase was studied using dynamic light scattering.
