Under this definition, the trypsin inhibitory activity is expressed in trypsin units inhibited (TUI) or trypsin inhibitor units (TIU) per mg sample and calculated as follows: (Formula presented.) where, (A410R - A410RB) = A410CR, corrected reference reading at A410, (A410S - A410SB) = A410CS, corrected sample reading at A410. (A410CR-A410CS)/A410CR should be in the range of 0.30 to 0.70, that is, 30-70% of trypsin inhibition by a given dilute sample extract. Under the condition of the 5-mL (half volume) assay, a trypsin unit is defined as an increase of 0.02 absorbance at 410 nm (to be explained later). Under this definition, the trypsin inhibitory activity is calculated using the same equation as above for the 10 mL assay, except for replacing x 100 with x 50.
