The desire to obtain higher oleic content in oils is driven by several factors, such as increased oxidative stability of the oil. Higher stability increases the likelihood that an oil will be used as a replacement for palm oil in many applications, or as a replacement for hydrogenated oil that contains trans fats. The Mediterranean diet has also popularized the health benefits of high-oleic oil. These benefits have recently been cited by the US Food and Drug Administration (FDA). © 2020, American Oil Chemists' Society. All rights reserved.
