摘要
As a new emerging digital food processing technology, 3D printing technology has been widely used in food, materials, aerospace, automobiles, building models and other fields. Food 3D printing technology can also be called an “additive manufacturing” technology, which has the advantages of convenience, flexibility and high precision. It can realize the personalized customization of food, such as appearance, color, texture, taste and formula. This paper reviewed the principles of Food 3D printing, 3D food materials and applications, and hopes to lay a foundatsn for the development and application of food 3D printing materials. © 2021 Authors.
