Carbon quantum dots (CQDs), as a novel class of luminescent nanomaterials, have attracted considerable interest in the field of food safety due to their high bright luminescence, low toxicity and good biocompatibility. This paper introduced the fluorescence detection mechanism of CQDs, including internal filter effect, photoinduced electron transfer, fluorescence resonance energy transfer, and so on. And their application in food analysis was reviewed systematically, such as the heavy metal ions detection, food additives detection, foodborne pathogenic bacteria detection, pesticide residue detection, veterinary drug residue detection, food nutrients detection and other molecular detection.
