摘要
Polyphenol oxidase (PPO) is a copper containing enzyme widely occurred in many plants, animals, bacteria and some fungi. Polyphenol oxidase has wide applications in the field of biosensor formation, food industry, medicine and waste water treatment. Extraction and purification of PPO was studied by many researchers from wide variety of plants and fermentation process using various methods such as salt precipitation, three phase partitioning (TPP), aqueous two phase extraction (ATPE), reverse micellar extraction (RME) and chromatographic techniques. Physio-chemical characterization of the same was performed by the researchers using different techniques. Diversity in the resources of the enzyme also made scientist to study its substrate specificity, optimized activity conditions and inhibitors in detail. Aim of this review is to summarize the detail study regarding extraction and purification of polyphenol oxidase performed by researchers from wide variety of sources.
