Some general physico-chemical properties of lupin seen (Lupinus albus, ssp. Graecus) protein isolate solutions were studied. These included: molecular weight, isoelectric point, amino acids, temperatures and enthalpies of denaturation. (C) 1995 Academic Press Limited.
