In dairy cows, mammary cells synthetise 50p. cent of milk fat, nearly 100p. cent of milk proteins and 100p. cent of lactose. This article describes, for each constituant of milk, mammary uptake from arterial blood, the main metabolic processes for biosynthesis and their regulation.
