摘要
Endosperm proteins of wheat form films at the air/water interface that are perforated by mechanical stress and transform into a two-dimensional network of protein fibrils. This behaviour was observed by transmission electron microscopy and was also found with corn proteins, bovine serum albumin and poly(γ-methyl-l-glutamate). It is discussed with regard to the special structure of gluten. © 1990 Springer-Verlag.
