Evaluation of the Effectiveness of antioxidants Isano (Tropaeolum tuberosum Ruiz & Pavon) in the oxidation of soybean oil

摘要
Phenolics and antioxidant capacity of the antioxidant extract isano quantitated. the effectiveness of the antioxidant extracts isano adding concentrations of phenolic compounds 100, 300 and 600 ppm in oil samples was then evaluated, the samples were stored for 15 days at 55 degrees C, under the same conditions a synthetic antioxidant (BHT) was evaluated and a sample without antioxidant. The samples were analyzed at 0, 7 and 15 days peroxide content and antioxidant capacity in soybean oil samples. The results showed greater efficacy of antioxidant extracts isano 100, 300 and 600 ppm and compared to sample without antioxidant BHT in soy oil oxidation. Introducing greater protective effect ARBs 5241 and 5366 genotypes ARV concentration of 300 ppm
